Palomilla

First off, here is my choice for this summers grilling beverage.. Nothing like a Corona and lime when grilling in the Southern and Central American tradition (I am hooked on Chimichurri this year)..

Tonight I tried a new basting marinade called Palomilla (basically a garlic and lime marinade of Cuban origin).. The result was outstanding (although it did not translate well when photographed).. The combination of salt, lime, garlic and cumin really made a perfect summer flavor.. Add a couple grilled onions (with olive oil, salt and ground white pepper), a fresh salad and your stylin in the 80% humidity.. Placido, Carlos & Maggs will feel right at home if they ever decide to come over..
